Corn Relish

14 oz. fresh or frozen and prepared corn
2 roma tomatoes diced
2 green onion diced
2 Tblsp cider vinegar
2 tsp honey
2 tsp dried oregano
1/4 tsp cayenne pepper
1/2 tsp salt
Mix together and chill.

Serve with meat chicken or fish

Sweet and Sour Sauce

1/3 cup rice vinegar
1/4 cup brown sugar
2 Tblsp Ketchup
1 tsp soy sauce
8 oz fresh pineapple chopped
2 tsp cornstarch
1 Tbls plus 1 tsp water

Blend first five ingredients together until a smooth puree
In small bowl mix cornstarch and water
In small sauce pan heat mixture on medium until hot add cornstarch and stir until it gets a little thick ..let cool.

Serve with chicken or fish
